But i dont think they really need to be broken in. Everything else in the head is going to mechanical wear from the beginning. As far as the PSI, im pretty sure, yeah. Firstly though, thats theorhetical pressure, not actual. Theorhetical would be in perfect, controlled conditions, a combustion chamber is far from that, so actual results will be significantly lower. Also, when you do a compression check, remember, the engine is not running, there is no boost, no combustion, just the compression of the engine. When you compress, and then set off an explosion...well lets just say the PSI goes up...alot. Enough to push a tiny piston with enough force to move 3500 pounds.
